Vinification: Manual harvest; 3 days spontaneous fermentation with natural yeast in stainless still tanks

Taste: Cherry red colour with pink tones, intense fruit notes remembering rose flowers, clove, violets and dried fruit. Intense on the palate, soft tannins, harmonious sweetness and a very long finish.

To serve at 9-11 C.

Closure: Glasscork.

Grape variety: 100%  Sangiovese

Vinification: The Pomace is immediately vacuumed sealed and then distilled in order to preserve and maintain all the characteristic intact.

Colour: Pure crystal white

Nose: Fine and fruity fragrances, reminiscent of peach and apricot.

Taste: Soft, sumptuous and enveloping, elegant fruity.

Closure: Glasscork.

Aging:  24 months in 15 hl barrels (Oak wood)

 

 

Type: Red Still

Grape variety: 100% Barbera

Winemaking process: grapes facing west, 420 meters AMSL, clay soil, Guyot arrangement, 5.000 stumps per hectar. Organic growing, manual harvest at full maturation with selection of the grapes. Crushing by de-stemming and contact with the peels for a few day. Fermentation in temperature-controlled steel tanks, maturation and aging in big oak barrels (15 hl) for 24 months.

Tasting note: red, still wine of a ruby red color, with a fruity, wide fragrance and harmonic, persistent taste with pleasant floral notes and a thick silky body.

Serving note: ideal for a robust cooking, with grilled meats, game, cooked cold cuts and stews.  The suggested serving temperature is 18°

Curiosity: Piedilupo is the name of the eldest vineyard of Castello di Stefanago. About this vineyard there is a legend that tells about a "giant arrived from the north" who brought and planted fir the first time the grape, unknown in the territory at that time, and then in the cellars of the castles "...where no sunbeam nor bell reaches..." the grapes harvested have become a wine which express the meaning of this land and of the work of the people who inhabits it. That's how, the legend says, the history of the wines begins at Castello di Stefanago.

Antica Enotria oil, obtained from the “coratina” olives, typical of Puglia olive-growing, produced by themselves and picked by hand and cold pressed during the day. Is characterised by a very low acidity (0,1%) that gives it an organoleptic quality and solidness.

The “bella di Cerignola” olives in brine are a local product of Apulia land and represent agricultural traditions delicacy and simplicity. Tomatoes hold the whole sun of the South that, exsiccate them, enriches them with an incomparable taste. They are preserved in Antica Enotria’s extra virgin olive oil, to make them a  savoury seasoning and appetizer.

TOMATO SAUCE

Antica Enotria tomato sauce is obtained only from organic farming tomatoes grown in the farm. Its high thickness (8 brick) and its unique sweet flavour of fresh tomatoes make it a product of excellent quality. Great for sauces and tomato-based sauces.

UNCOOKED LITTLE TOMATOES

UNCOOKED LITTLE TOMATOES



The little tomatoes, cultivated in the farm following the ICEA provisions, are selected and packaged by hand in jars of glass directly after picking.  Thanks to a short pasteurization it can be preserved for 3 years at least.

This product is an excellent substitute for fresh tomatoes for all its uses. Your sauces as well as your appetizers will be delicious.
