The beans from Carpino, protected by Slow Food http://www.fondazioneslowfood.com/it/presidi-slow-food/fava-di-carpino/: we are in Puglia, Gargano, in the municipality of Carpino, where the land is particularly suited to the terrain cultivation of these beans, renowned for their flavor and tenderness
Recipe for 4 people:
- 1 octopus 1,5 kg
- dried beans of Carpino 0.5 kg
- chopped biological capers by Fratelli Gaudiano di Cerignola
- Coratina Acquamela oil from organic farming from the countryside of Cerignola, 30 hectares of olive trees
Process:
Let's start by cooking the octopus in vinegar and lightly salted water, for about 2 hours; meantime we cook the beans with a bouquet garni consisting of onion, celery, carrots and salt to taste.
Once cooled down, we are going to transversely sever the octopus tentacles as needed.
When beans are ready, blend with an immersore (blender) with extra virgin olive oil, creating a sort of a cream.
Dressage (setting):
Light roast the tentacles on barbeque, heat the sauce and lay it on the plate as a basis; add the grilled tentacles in center of pan; add just a tickle of extra virgin olive oil, a light spread of chopped capers, lemon zest and it's done.
